By signing lots of release forms that you won’t sue them even if it cause physical ailments, or at worse death in order to see how a drug works when first tested on humans. Sounds like a plan doesn’t it?
Usually such programs advertise in the classifieds for participants.
If it involves medications then usually they go though physicians to find patients for blind studies which means you may or may not be getting the medication. It could be a placebo.

Try inquiring at the nearest university. Probably the Food Sciences or Nutrition department, if they have one of either.
